Bordier Selection opens store at ICONSIAM

If you think butter only comes in the salted, unsalted and garlic variety, think again. Imagine an entire store dedicated to this delicious condiment. At newly opened Bordier Selection at ICONSIAM, shoppers will find the full range of the world-famous Le Beurre Bordier, as well as seasonal releases. Customers will also be able to purchase a limited range of Bordier cheeses, including Comté AOP, Truffle Gouda and Sainte Maure de Touraine AOP.

Le Beurre Bordier is known the world over for its high-quality and unique production methods. Butter artisan Jean-Yves Bordier, the master behind Le Beurre Bordier, sources the highest grade Breton milk from organic farms in Brittany and Normandy, less than 80km from the dairy. The milk is first skimmed, then aged, an essential step for the butter to express its flavours. The butter is then left to rest for 24 hours before being brought into the workshop for kneading and churning by hand using a teak frame and wheel to turn the butter and stretch it in different directions. Churned, kneaded by hand, and salted to taste, Bordier butter is then shaped using paddles, ancestors of the wooden butter mold, hence the expression “pounding" or “beating" the butter. These movements, requiring great dexterity and clockwork precision, take the ingredient into consideration and are actually quite gentle, thus respecting the product’s texture.

Jean-Yves Bordier works with some of the best chefs in the world, including several working in 3 Michelin-starred restaurants. He’s also worked creatively to add more exotic flavours to the butters over the years, inspired by his travels and work with local chefs. All butters are tailor-made to suit his customers with a level of humidity and salt content that each one pre-determines according to the uses for which the butter is intended.

Butters available at the new shop at ICONSIAM include: Unsalted Butter, Demi Salted Butter, Yuzu Butter, Olive Oil Butter, Seaweed Butter, Espelette Butter, Sichuan Butter, Buckwheat Butter, and Smoked Salt Butter. Some butters, like the Raspberry Butter and Onion Roscoff Butter, are seasonal and not available all year round.
