CITY: Sushi Kanesaka x Alain Ducasse at The Dorchester – Wednesday, 5 March 2025
The series begins with three Michelin-starred Alain Ducasse at The Dorchester, as Jean-Philippe Blondet and the Sushi Kanesaka team craft a menu that harmonises the delicate artistry of Japanese sushi with the refined finesse of French haute cuisine. Guests will enjoy a meticulously curated menu featuring signature dishes from both chefs, from hand-dived scallop with citrus beurre blanc and caviar to fillet of Wagyu beef with confit leeks and Périgord sauce.
Jean-Philippe Blondet comments: “French cuisine and Japanese cuisine share a deep respect for ingredients and craftsmanship. This collaboration is an opportunity to create something truly exceptional – a seamless blend of our techniques, philosophies and passion for precision."
COUNTRY: Sushi Kanesaka x Woven by Adam Smith – Tuesday, 20 May 2024
The second instalment takes guests into the English countryside, where Adam Smith, of Coworth Park’s Woven by Adam Smith, brings his deep appreciation for British ingredients and produce to the omakase counter. The menu will highlight the seasonality of spring with Cornish seafood, new season asparagus and estate wild garlic alongside Sushi Kanesaka’s signature sushi, weaving together traditional Japanese techniques with the best of British culinary heritage.
Adam Smith comments: “The beauty of this collaboration lies in storytelling through ingredients, both from the tradition of omakase and the dishes I’ve created from the larder found within our shores. This menu will be a celebration of exceptional British produce and the respect we share for our craft."
COAST: Sushi Kanesaka x Nathan Outlaw – Tuesday, 29 July 2024
The final event in the series brings Michelin-starred seafood master Nathan Outlaw to the counter, where he will showcase Cornwall’s bounty from coast to field. Focusing on seasonal and sustainable seafood, this menu will reflect Outlaw’s deep-rooted connection to the sea, paired with Sushi Kanesaka’s masterful approach to Edomae sushi.
Nathan Outlaw comments: “Over the past two decades, I have dedicated my craft to the pursuit of seafood excellence, uncovering original techniques and recipes while harnessing the nuances of classical seafood cookery. Every dish reflects the time and place of the ingredients gathered making this collaboration a natural evolution of that ethos."
Offering an unparalleled Edomae sushi experience, Sushi Kanesaka sources ingredients both from long-standing suppliers in Japan and the finest seasonal seafood from the UK and Europe. The carefully curated sake collection, artisanal glassware, and meticulously designed interiors by master Itai-san further elevate the experience.
