Alexander Melchers is telling me about the time his parents took him to his first “proper" hotel when he was about eight or nine, to a Four Seasons in Hamburg. They had wanted him to appreciate the finer things in life, but the one thing that fascinated young Melchers was the minibar, where he sampled the miniscule bottles of schnapps and whisky, and placed them back in the fridge. Needless to say, his parents were not amused at their bill.

If I could be reincarnated
, I’d choose David Bowie, or his alter ego Ziggy Stardust. Bowie’s a great personality and the way he transforms himself so often is amazing. He plays every instrument, has an amazing voice, composes, produced songs. So he’s it for me. He isn’t a passing fad, he’s over 60 and still an icon. And he’s good-looking, so that helps.

For visitors who have been to Singapore, I take them to Cuppage Plaza. There’s a Japanese restaurant called Kazu Sumiyaki and it’s very intimate. People don’t expect to see what they see at Cuppage Plaza and therefore it is an interesting introduction. I’ve been going there for the past 10 to 12 years now and they still have the same three key waiters, which is why I always go back. When the staff stays, it’s the best sign of a good restaurant.
