May 16, 2024 – The chefs of five favourite Phuket restaurants are getting a unique opportunity to flex their culinary creativity as part of the Chefs of Parole collaboration that kicks off on Saturday, June 1. The first event will feature Chef Korn from Five Olives, Chef Charlie from Aulis Phuket, Chef Tan from GOAT, Chef Steve from Laad Phuket and Chef Alex Oddy from JZY CHF.
The prison-themed ‘release program’ will see some of the best chefs in Phuket freed of any supervision and constraints, other than a theme to build their menu around. Each chef gets one night when they are not representing a business or brand – just their own raw talent.
Chef Charlie is originally from Norwich, UK, his professional journey led him to some of the most renowned kitchens around the world, including two Michelin-starred Ynyshir, Wales, UK, where he worked as a junior sous chef before moving to Asia to become the sous chef at Noi, a now two Michelin-starred restaurant in Hong Kong. As head chef at Aulis Phuket, Charlie is deeply committed to local Thai ingredients, working alongside executive chef Oli Marlow to champion Simon Rogan’s farm-to-table ethos, which centres around a deep respect and reverence for seasonality and local produce.
Chef Tan is renowned for his creative concoctions, as well as his conscientious approach to running restaurants, with a focus on supporting local farmers and sustainable practices. He opened GOAT Bangkok, offering an ‘Off-Beat Thai – Chinese cuisine’ tasting menu in an artistically eclectic setting, using locally sourced and sustainable ingredients.
Chef Steve started his culinary training in New York and has brought his Michelin-star experience to Thailand. He has competed on Top Chef Thailand as the only non-Thai contestant and appeared on Iron Chef Thailand as a chef-challenger, as well being the head chef at the prestigious Quince Bangkok.
Chef Korn from Five Olives restaurant is passionate about everything Italian, especially the food. With extensive kitchen experience in Australia and a background as a former chef at Mizulim Chef Table, he spent a lot of time creating amazing contemporary Neapolitan pizza dough, which has a unique technique. His first restaurant is Marni in Phuket, followed by the second, Five Olives also in Phuket, and most recently Marni in Krabi. His dedication has earned Marni a spot in the 50 Top Pizza in Asia Pacific in 2023 and 2024 consecutively.
Chef Alex brings over 20 years of international experience, spanning restaurants, cafés, clubs and premium resort brands. He is also known for the successful home bakery he created in Phuket during the COVID-19 lockdowns – The Jazzy Bakery – and his famous sourdough bread and cookies.
Each chef will be given a different theme to craft their menu around, cooking ‘Food to Drink to’ – the dishes they love to eat after a few too many post-service cocktails.
This event will be hosted at Mrs B Bar & Table in Cherngtalay on Saturday, June 1 – ala carte menu to try out as many dishes from their favourite chefs.
