The chefs of five favourite Phuket restaurants are getting a unique opportunity to flex their culinary creativity as part of the Chefs of Parole collaboration that kicks off on Saturday, June 28. The fourth event will feature Chef Satya, Executive Chef from OUTRIGGER Phi Phi, Chef Ramon, Executive Chef from FIRA Phuket, Chef Charlie, Head Chef from Aulis Phuket, Chef Yannick, Partner Chef at OMEMO, Chef Alex, Partner Chef from Mrs B Bar & Table Phuket.

Satya Beeknoo, Executive Chef at OUTRIGGER Phi Phi

Chef Satya who is the Executive Chef for OUTRIGGER Phi Phi (formerly with Zeavola Resort), is known for his sustainable, zero waste approach to open fire cooking techniques and his focus on local ingredients. He is the winner of Iron Chef Thailand competition in 2020, demonstrating his ability to create delectable and sustainable dishes with limited ingredients. Prior to Zeavola, he worked in various hotels on Mauritius, the Maldives, and in Dubai, and his innovative dishes often combine international and traditional Thai cuisine and Creole version.

Ramon Verano, Executive Chef at FIRA Phuket

Chef Ramon’s culinary journey began at the Michelin-starred Koldo Miranda in Asturias, where he honed his technique and passion for bold, seasonal flavors. Raised in Alvies, Spain, his ingredient-driven approach was shaped by early experiences with local farmers, butchers, and fishmongers. His career has since taken him through London, Shanghai, Tokyo, and Bali, where he collaborated with Chef Blake Thorney, blending global influences with his Northern Spanish roots. Now at Kipo, Chef Ramon crafts creative, unpretentious dishes that celebrate quality produce and vibrant flavors.

Charlie Wilson, Head Chef, Aulis Phuket

Chef Charlie is originally from Norwich, UK, his professional journey led him to some of the most renowned kitchens around the world, including two Michelin-starred Ynyshir, Wales, UK, where he worked as a junior sous chef before moving to Asia to become the sous chef at Noi, a now two Michelin-starred restaurant in Hong Kong. As head chef at the recently acclaimed 1 Michelin-starred Aulis Phuket, Charlie is deeply committed to local Thai ingredients, working alongside executive chef Oli Marlow to champion Simon Rogan’s farm-to-table ethos, which centres around a deep respect and reverence for seasonality and local produce.

Yannick Hollenstein, Partner Chef at OMEMO

Yannick’s culinary career is marked by dedication and creativity. As a Culinary World Champion with the Swiss Culinary Junior National Team, he has distinguished himself in prestigious European kitchens before relocating to Thailand. Within six years in the Kingdom, he successfully elevated a French restaurant in Patong to a celebrated dining establishment listed in the MICHELIN GUIDE. Among various other accolades, Yannick also earned the Gault Millau Switzerland “Swiss Star Abroad 2024" award, becoming the first Swiss chef from Thailand to receive this distinction. He is now set to make his comeback with the imminent opening of restaurant OMEMO.

Alex Oddy, Partner Chef, Mrs B Bar & Table

Hailing from Australia, Alex has almost 30 years of international experience spanning restaurants, cafés, clubs, and premium resort brands across Thailand and Vietnam. As part of the team that helped Mrs B establish itself as a neighbourhood favourite in Phuket, Alex is poised to open his newest venture: Melbourne, a new café and bakery located in Tinlay Place, Phuket.

 

Each chef will be given a different theme to craft their menu around the theme ‘Fancy That" – chefs will cook something that looks fancy, sounds fancy or is just plain fancy.

This event will be hosted at Mrs B Bar & Table in Cherngtalay on Saturday, June 28 – ala carte menu to try out as many dishes from their favourite chefs.
