Tahona: A New Taste of Local Roots, Where Heritage Ingredients Meet Modern Hands

Bangkok, Thailand – August 1, 2025 A new chapter in Bangkok’s dining and nightlife scene has arrived with the seamless integration of Sanctuary, a rooftop bar full of intrigue, and Tahona, an intimate restaurant nestled quietly beneath its architectural curves. Designed to transition effortlessly between moments, this shared space invites guests to move from a thoughtful meal to a soulful drink in one fluid motion. At Tahona, craftsmanship meets culinary culture, a place where every element tells a deeper story of people, place, and purpose.

The name “Tahona" comes from the traditional stone wheel used to crush agave for tequila. A symbol of transformation, both in narrative and method. This philosophy shapes the entire dining experience: turning humble ingredients into meaningful cuisine through intention, creativity, and care.

The architectural language of Tahona draws from Toron Architecture, earthen brickwork, and local wisdom, creating a raw and refined yet warm and quietly powerful atmosphere. The space evokes an ancestral instinct: the timeless human impulse to craft, nourish, and connect.

At its heart, Tahona is guided by the concept of “Flavors Rooted in Tradition." The food is more than just flavorful. It’s evocative. Every dish tells a story of origin, season, and memory through a contemporary lens. The seasonal menu highlights carefully selected local ingredients, not only from across Thailand but also from around the world, where they align with the restaurant’s vision of refined simplicity.

The Tahona Food & Beverage team brings inspiration from various regions in Thailand and combining it with intricate techniques to create this season’s menu at Tahona, one that is both deeply rooted and contemporary. Together, they present a culinary expression that transforms humble ingredients into memorable experiences.

Every dish at Tahona is thoughtfully crafted with ingredients at its core. We source only the finest, most intentional ingredients to celebrate the true flavors of what nature offers. These elements are presented through a modern approach with inventive plating while preserving the deep-rooted essence of Thai culture. Signature dishes include: Grilled seafood with Potted  exotic rice, a GABA rice native to Northeastern Thailand, paired with fresh seafood from the Gulf of Thailand and served with a bold, Thai-style seafood dipping sauce. Grilled River prawn with sour curry sauce and pickled Siam Tulip, using plump river prawns from Surat Thani stir-fried with Tahona’s house curry blend, a tangy-forward recipe, balanced perfectly with grilled pickled radicchio. Wagyu Hanger and Local black pepper sauce, cooked to the ideal doneness, featuring melt-in-your-mouth tenderness, aromatic grilled spring onions, and infused herbal oil. Every plate is designed to awaken the senses, familiar aromas of local ingredients, flavors that feel both new and nostalgic, and textures that transport you to memories of home.

Tahona is created not just for those seeking a meal, but for those looking to make memories. It is a place where instinct, craft, and connection converge where slow conversations over dinner evolve naturally into a night alive with rhythm, energy, and warmth.

Tahona is not just a restaurant. It’s a reimagining of landscape and culture, expressed through food, materials, and the pulse of life embedded in every detail.

“Humble, yet profound. Local, yet contemporary."
This is the spirit of Tahona and what we hope you’ll feel at every table shared with us.
