To advocate the rediscovery of culinary roots, this year’s theme “Forgotten Flavors" is currently being showcased across seven handpicked destinations in Asia Pacific with The Ritz-Carlton, Bangkok delivering the crescendo of the series. Scheduled from September 25 to 28, a stellar cast of critically acclaimed chefs and mixologists, including David Toutain, Valentin Fouache, Adam Catterall, Loïc Portalier, Tala Bashmi as well as local maestros like Chef Jai of Charmgang, will descend upon One Bangkok.
“Forgotten Flavors" draws inspiration from Marriott’s comprehensive Future of Food 2025 Report, which revealed that Asia Pacific commands a remarkable 37.8 percent share of the global culinary tourism market with projected growth to USD6.2 trillion by 2033. The report identified a significant shift toward traditional cooking methods and ancient ingredients, with emphasis on sustainable and cultural practices. These findings underscore the growing appetite for immersive gastronomic journeys among affluent travelers and increasing interest in traditional ingredients and time-honored techniques often overlooked in modern fine dining, validating this year’s focus on rediscovering culinary heritage through contemporary innovation.

The Ritz-Carlton, Bangkok’s creative program showcases extraordinary flavors and flair across multiple dining destinations. At Duet by David Toutain, guests will enjoy innovative six-hands dinners featuring the celebrated French chef alongside Chef Valentin Fouache and Chef Adam Catterall from Hong Kong’s Michelin-starred Roganic on 25 and 26 September. A second collaborative experience on 27 and 28 September will unite French culinary artistry with Asian refinement, as Duet partners with Louise Hong Kong’s Executive Chef Loïc Portalier.
The gourmet adventure continues with Friends of Lily’s on 27 and 28 September, where Chef de Cuisine Sedtapat Sukpaisanpongsa (Pop) orchestrates an inventive symphony alongside Chef Tala Bashmi, MENA’s Best Female Chef conferred by the World’s 50 Best, Chef Loïc Portalier, and Chef Jai of Charmgang. This groundbreaking collaboration is a harmonious fusion of Middle Eastern, Thai, and French culinary traditions. On 26 September, an intimate private dining experience at Lily’s, limited to only 10 guests, will feature Chef Tala’s masterful interpretation of Bahraini cuisine, offering diners an authentic taste of her homeland through thoughtfully crafted bites.
Under the expert guidance of Bar and Beverage Manager Ewen Ledan, Calēo Bar will host an exclusive collaboration on 25 and 26 September between Angelo Sparvoli, Head Bartender of London’s legendary American Bar at The Savoy and Simone Rossi, the celebrated cocktail maestro from Hong Kong and creator of Ratafia Rossi, a distinctive Italian ratafia cherry liqueur.
Additionally, Calēo will present an immersive multi-sensory chocolate afternoon tea experience, showcasing beans sourced from the world’s most distinctive cacao regions. Guests will enjoy guided tastings and live demonstrations by Executive Pastry Chef Sylvain Constans, revealing the craftmanship behind each exquisite creation from 25 to 28 September.
